Spicy! Breakfast Tacos

Ingredients

    Toppings
  • 4 medium radishes, sliced thin and quartered
  • 3/4 C arugula micro greens
  • 2 tbsp Pickled Jalapeños, sliced
  • 1/2 C cherry tomatoes sliced into quarters
  • 2 tbsp Phoney Baloney Coconut Bacon
  • 1 acocado, seeded & sliced
  • Tofu
  • 1 14 oz. pkg. of extra firm tofu, pressed and drained
  • 2 tbsp Jalapeno juice, divided
  • 2 tbsp vegetable broth
  • 1 tsp paprika
  • black pepper to taste
  • Black Beans
  • 1 15oz. can black beans, drain and rinsed
  • 1/2 tbsp dried parsley
  • 2 tbsp Jalapeno juice, divided
  • 1 tsp cayenne pepper
  • 1/2 tsp cumin
  • Everything else
  • 1/4 C Heidi Ho Spicy! Chia Cheeze
  • 6 corn totrillas
  • non-stick cooking spray

Instructions

  1. Coat a large skillet with non-stick spray and place over medium-high heat. Slice Tofu into 4 long flat slices and cook in the skillet for about 4 minutes on each side.
  2. Using a spatula break up the slices and add in jalapeño juice, paprika and vegetable broth. Cook for an additional 10 minutes continually break up the tofu slices as broth and jalapeño juice absorb into the tofu. Turn off heat but leave on the burner so tofu stays warm while you start your beans.
  3. Place your rinsed black beans in a small saucepan over medium heat. Add in parsley, jalapeño juice, cayenne pepper and cumin and stir to incorporate. Once beans being to simmer reduce heat and stir to ensure everything is evenly heated.
  4. Meanwhile In a separate saucepan heat Heidi Ho Spicy! Chia Cheeze over medium heat until cheeze is thoroughly heated and texture is smooth and creamy.
  5. Heat your tortillas in a cast iron skillet or in a microwave to soften and start to assemble your tacos.
  6. We started with about 2 tablespoons of black beans follwed by a 1/4 C of tofu scramble per taco. Top with avocado, radishes, tomatoes and a generous helping of Heidi Ho Spicy Chia Cheeze.
